Ingredients& Preperation:
– 4 Pork Steaks, diced
– 2 Baskets of egg noodles
– 3 tbsp low salt light soy sauce
– 1 tbsp organic honey
– Juice of 1 orange
– 1 tbsp coconut oil
– 3 garlic cloves, crushed
– Some crushed dried chillies, to taste
– Piece of fresh ginger finely chopped
– 2 carrots, peeled, cut into match sticks (Julienned)
– 1 red pepper, deseeded, finely chopped & sliced
– 1 yellow pepper, deseeded, finely chopped & sliced
– Few spring onions, shredded lengthways
– Few sugar snap peas
– Fresh parsley leaves, to garnish when served
Personally I think this recipe served two but you could just go for 2 pork steaks if you want. I like to have plenty meat in for the protein so go for two pork steaks per person J
Prepare up all the ingredients ready.
Step 1) Preheat coconut oil in a wok. Chuck in the diced pork and cook through until about 5 minutes away from thoroughly done. It’s gunna be roughly around 10/15 minutes depending on the heat you use.
Step 2) More preparation. Mix together the soy sauce, orange juice and honey.
Step 3) To get ahead. Cook the noodles as per packet instructions, rinse, strain and set aside until needed.
Step 4) Add the garlic, ginger, chillies in to the wok with the diced pork and fry for around 1 minute then add all the veggies and stir fry for around 4 minutes. Add the spring onions for the final minute.
Step 5) Add in the drained noodles to the pan of pork and veggies, and then add the orange and soy sauce mixture. Toss well and stir fry altogether for about a further minute.
Step 6) Once all cooked through, serve into bowls and garnish with fresh parsley. Enjoy.

This one is one of my favourites. Although again, like the Beef & Broccoli stir fry it is high in salt because of the soy sauce. The rest of the meal follows high protein, moderate carbs, moderate fat.
Probably higher in calories than what you should be aiming for in a diet meal but still perfectly healthy. To have it lower in calories you could drop the noodles and use fry light instead of coconut oil… I personally think this meal is well worth going over you allowance by 150kcals or so because it’s lovely.

I personally think musclefood.com’s pork is the nicest pork ever available. Massive quality, soft, juicy and lean and british red tractor farm assured meaning no processing or added water or salt.. They come in packs of 4 for £4 so I just use a whole pack for this recipe.
