One of my personal favorite breakfasts.

Super tasty and very easy to make.
Ingredients:

– 3 Whole eggs, beaten
– 1 Cup of courgette, grated
– ½ a red onion, grated
– 1/2tsp Cumin
– Salt & Black Pepper
– Fry Light OR a tiny bit of natural butter.

 

Step1) – Warm a frying pan to medium to low heat on the hob. Add a few sprays of fry light or small nob of natural unsalted butter. Add the grated onions and lightly fry for a couple of minutes.

Step2) – After the onions start to soften add the cumin. I love this part, the natural aroma of cumin and onions frying.

Step 3) – Add the courgette and fry altogether. Organise the frying pan with the mixture spread out evenly.

Step 4) – Pour in the eggs to cover the veggies evenly. Add the salt and pepper to taste. Cook until the egg is cooked fully and serve.

I like to cut it in half in the pan with a spatula to turn them over then fold them in half again and serve on top of each as shown in the picture above.
